It is understood that the 28-year-old has been on the Black Cats' radar for some time, with former Sunderland boss Sam Allardyce also keen on the Spaniard.
Iborra is said to be similar to Maroune Fellaini, who is also highly admired by Moyes, but the Belgian is enjoying a new lease of life under Jose Mourinho, meaning that the chance of a Moyes-Fellaini reunion is very unlikely.
A number of clubs are said to be interested in Iborra, meaning that Sunderland will have to be patient and wait until the player reaches a decision.
The former Levante man has been at Sevilla for three years, where he has played 131 games, scoring 22 goals. He has also won three Europa League trophies with the Andalusian side.
