The goals took Kane's tally to nine in eight games for Spurs in all competitions so far this season and 11 in his last seven for club and country.
The Spurs academy player becomes only the seventh Englishman to score a Champions League hat-trick, following in the footsteps of Andy Cole, Mike Newell, Michael Owen, Wayne Rooney, Alan Shearer and Danny Welbeck.
Following his latest heroics, Spurs boss Pochettino lavished praise on his star striker, citing his 'killer' instincts as a reason for his consistent goal-getting.
"All the strikers that have this type of level they have something special in front of goals. They are killers. Harry has this special skill," he explained.
"He has unbelievable skills in front of goal. He has something special. That is why he is one of the best."
Next up for Spurs in the Champions League is a double-header against Spanish giants with Real Madrid, wiith Pochettino saying that the games will be the toughest that his side could possibly have faced.
"We are going to play against the best team in the world because I think Real Madrid are the best right now," he told the press.
"This season they are showing they are the best. You never know. We will be very motivated to play them. We know very well the quality they have.
"It's a big challenge for us to try to see what is our level and if we can compete in this type of level."
