The 26-year-old looks set to leave Goodison Park this summer after falling down the pecking order following the arrival of Morgan Scheniderlin, the emergence of Tom Davies and the return to fitness of Muhamed Besic, though it is understood that the 'Toffess' value the player at £25m.
The Republic of Ireland international made just 13 appearances in all competitions last season due to a series of niggly injuries, but he is now back fully fit.
New Leicester boss Craig Shakespeare is looking to revamp his midfield this summer, having already signed Sevilla midfielder Vicente Iborra and with Nampalys Mendy like to leave the club.
There is considerable interest in McCarthy, though Everotn's asking price has so far deterred the likes of Newcastle, West Brom and Crystal Palace from lodging bids.
It remains to be seen if the 'Foxes' are prepared to pay £25m for the player, but Everton would certainly welcome the funds as they look to build on what has so far been a very promising transfer window.
